Sweet and Sour Small Yellow Croaker

Ingredients for sweet and sour small yellow croaker: 500 grams of small yellow croaker (about 8 cm long), onion segments, ginger slices, garlic, soy sauce, sesame oil, dried chili peppers, vinegar, vegetable oil, sugar, and cooking wine in appropriate amounts.

How to cook sweet and sour yellow croaker

1. Remove the scales and gills of the small yellow croaker, cut open the belly and remove the internal organs, wash and dry, add salt, cooking wine, scallion segments and ginger slices and marinate for 15 minutes.

2. Cut the scallion segments, ginger slices, and garlic into chopped scallion, minced ginger, and minced garlic respectively; wash the dried chili peppers and cut them into small segments.

3. Put the wok on the fire, pour in vegetable oil, and when it is 70% to 80% hot, put in the yellow croaker and fry until golden brown, then remove from the oil.

4. Leave a small amount of oil in the wok and put it back on the heat. Add minced ginger, chopped green onion, mashed garlic, and chili peppers. Stir-fry until the spicy flavor comes out. Add water, soy sauce, sugar, vinegar, and cooking wine. Add the yellow croaker and bring to a boil. Skim off the foam. When the yellow croaker absorbs the marinade, add monosodium glutamate and sesame oil to thicken the marinade and cool it down.
