How to stir-fry chicken leg mushroom with pineapple

Have you ever tried this dish of fried chicken leg mushroom with pineapple? Let's learn about this dish together.

Fried Chicken Mushroom with Pineapple

Stir-fried Coprinus comatus with pineapple

When you think of sweet and sour food, you will probably think of sweet and sour pork. The sour and sweet taste mixed with the fragrance of fruits is very satisfying. However, this delicacy has become a taboo for vegetarians. Even if you are not a vegetarian, eating too much meat is not good for the body. Eating too much meat will gradually turn the body into an acidic constitution, and the body function will decline accordingly.

Is there a good way to kill two birds with one stone? In fact, it is not difficult. Replacing the meat in sweet and sour pork with mushrooms can balance the nutritional intake and taste perception. Mushrooms are rich in a variety of amino acids and vitamins needed by the human body, and they are low in calories and fat, so you don’t have to worry about eating them. The taste is closer to traditional sweet and sour pork. In fact, if you don’t point it out, you really can’t tell it’s mushrooms at the first bite, hehe.

(You can also use Hericium erinaceus, but the taste of Hericium erinaceus is stronger than that of Coprinus comatus, so it needs to be blanched first)

Ingredients for Pineapple Fried Chicken Mushroom

Fresh pineapple (the fruity aroma will be stronger, canned ones can be used if fresh ones are not available), coprinus comatus, bell pepper, onion, ginger, garlic, salt, starch, sugar, ketchup, eggs, cooking oil, white vinegar.

How to make fried chicken leg mushroom with pineapple

1. Cut the coprinus comatus into pieces, beat an egg in it, mix well, add dry starch, put a little more cooking oil in the pan, fry it when the oil temperature reaches 60%, turn the heat from medium to low, and remove it when it turns golden brown.

2. Gualiang sauce: Slice the onion, ginger and garlic and put them in a bowl. Pour a little more tomato sauce, some sugar, a little salt, a little white vinegar and some water starch and mix well.

3. In another pot, add a little oil to grease the pot, add the prepared simmering sauce when it is slightly hot, and then pour in the fried chicken legs, pineapple chunks, and bell pepper chunks, stir to coat with the sauce, and drizzle with a little oil before serving.
