Wash the rice. Cut the pork belly into small pieces. Wash the fresh oyster meat and soak it in water with a little vinegar for 20 minutes.

Bring water to a boil in a pot over high heat, pour in the rice, and reduce heat to medium.

When the rice is cooked until it blooms, add the pork belly slices, oyster meat, and salt, and cook over high heat until it becomes salty porridge.

Finally, add minced garlic, chopped shallots, white pepper and sesame oil. If you like a lighter taste, you can omit the sesame oil.

Tips:

When cooking porridge, add enough water at one time, and be sure to boil the water before adding the rice, so that the rice will bloom easily. If you stir while cooking, the porridge will be more sticky.

It may not be convenient to buy oysters in the north, so you can buy more oysters when the sun is good, dry them into dried oysters and save them for later consumption. They still taste delicious.

Before removing from the heat, you can put some chopped spinach into the boiling porridge to add a unique and refreshing flavor.
