How to cook eggplant with beans:

1. Eggplants absorb a lot of oil when they are put into the pot, and they will release all the oil when they are about to be taken out of the pot, so they will be very greasy. The solution is to put the cut eggplants in salt water for about 10 minutes. This will not only pickle out all the water, but also remove the toxins in the eggplants. You will notice that the water that has been rinsed with salt water has turned into brown sugar color. 2. Bring the water in the pot to a boil, put the cut beans in, blanch them for a few minutes, pick them up and rinse them in cold water for later use.

3. Add oil to the pan, and when it is 60% hot, add the dried chilies and fry until fragrant, then add the chopped green onion, ginger and garlic and stir-fry for a few times. 4. Add the beans and stir-fry until they change color, then add salt and stir-fry for about 1 minute. Finally, add the eggplant and stir-fry until it changes color, becomes soft and cooked (add a little salt at this time according to personal taste) Add a little water and MSG, then serve.

Notice:

1. Beans must be stir-fried thoroughly, otherwise there is a risk of food poisoning. Here is a tip: beans are raw when they are emerald green; once they turn yellow-green and become soft, they are cooked.
