Salted fish is fish that is pickled with salt and then dried. In the past, because there was no low-temperature preservation technology, fish easily rotted. In ancient China, salted fish was called "abalone", and there was an idiom "abalone shop" (this is not the abalone that is now a precious seafood). Among the salted fish in Guangdong, Mayou is the most famous, which is a kind of plum-flavored salted fish with a strong and special smell. The Guangdong specialty dish salted fish and chicken fried rice is made with this method.

It is especially suitable for people suffering from oral ulcers, swollen and painful gums, bad breath and constipation.

Tips for pickling fish:

1. Soak the fish pieces, fish segments or fish fillets in milk, sprinkle with a little dry flour, and fry or deep-fry them. They taste great.

2. Apply fine salt to the fish belly to remove the fishy smell, then wash and drain, add a small amount of cooking wine, and then put 3 to 5 slices of ginger and scallion segments, toss up and down a few times to make the fish evenly flavored, then cover the bowl and marinate for half an hour. The fish will taste more delicious after it is cooked.
