According to a research report by the US Department of Agriculture, the comprehensive antioxidant index of kiwi ranks among the top fruits, second only to niche fruits such as roxburghii and blueberries, and far stronger than daily fruits such as apples, pears, watermelons, and citrus. It is a representative third-generation fruit along with blueberries.

Kiwi fruit (defective fruit can be used as raw material), yeast sugar solution, sugar, and alcohol.

How to make kiwi wine

1. Cleaning: Rinse with clean water to remove impurities;

2. Crushing: crush into pulp in the crusher, or crush with a wooden stick;

3. Pre-fermentation: Add 5% yeast sugar solution (containing 8.5% sugar) to the pulp, stir and mix, and carry out pre-fermentation. The temperature is controlled at 20-25℃, and the time is about 5-6 days.

4. Wine pressing: When the residual sugar in the fermenting pulp drops to 1%, it needs to be pressed and separated, and the pulp is transferred to the post-fermentation;

5. Post-fermentation: add a certain amount of sugar according to the alcohol content of 12 degrees (it can also be converted into the required amount of sugar according to the required alcohol content during the pre-fermentation, and the adjustment is completed at one time), keep the temperature at 15-20℃, and separate after 30-35 days;

6. Adjust the alcohol content: Use more than 90% alcohol to adjust the alcohol content to about 16 degrees, and then store it for more than two years to obtain the finished product.

Preparation of kiwi fruit wine

The processes of raw material selection, cleaning, crushing, and juicing are the same as those of juice extraction. After the juice is extracted, 95% refined alcohol and juice are mixed into wine at a ratio of 1:45-50. Then it is stored and clarified, and the upper clear liquid is siphoned with a plastic tube, and the lower turbid liquid is filtered with a cloth bag with filter cotton. The clarified liquid filtered by the best pulp is put into a sterilized glass bottle, and heated to 70℃ in boiling water for sterilization to obtain the finished product.
