Introduction

Hair shrimp is the largest shrimp resource in my country's marine shrimp production. The most common ones are Chinese hair shrimp and Japanese hair shrimp. The former is mainly distributed in the Yellow Sea and Bohai Sea, while the latter is more common in the East China Sea. The two are very similar. If you don't observe carefully, you might think they are the same species of shrimp. Hair shrimp is small, usually only 3 cm, so it is not noticed. However, the shrimp skin processed from it is one of the important marine products for my country's export and foreign exchange earnings.

Nutritional value of dried shrimp

Shrimp skin is also called hair shrimp. Shrimp skin has extremely high nutritional value, high protein and rich minerals. The ways to cook shrimp skin include shrimp skin tofu, spicy shrimp skin, dried shrimp skin, shrimp skin pumpkin soup, shrimp skin winter melon soup, shrimp skin egg custard, seaweed and shrimp skin soup, shrimp skin tofu, shrimp skin spinach porridge, shrimp skin kelp soup, and shrimp skin shredded radish soup.

The efficacy and function of dried shrimp

1. Shrimp skin is rich in magnesium, which plays an important regulatory role in heart activity. It can protect the cardiovascular system well, reduce the cholesterol content in the blood, and has a certain effect on preventing arteriosclerosis, hypertension and myocardial infarction.

2. Shrimp skin is rich in protein and minerals, especially calcium. It is known as a "calcium warehouse" and is the best way to supplement calcium for people with calcium deficiency.

3. Shrimp skin also has a calming effect and is often used to treat neurasthenia, autonomic nervous system dysfunction and other symptoms.

4. Elderly people can prevent osteoporosis caused by calcium deficiency by eating dried shrimps regularly. Adding some dried shrimps to the elderly’s meals is good for improving appetite and strengthening physical fitness.

5. Shrimp skin is edible by the general population; it is especially suitable for the middle-aged and elderly, pregnant women, patients with cardiovascular disease, people with kidney deficiency and impotence, male infertility, and people with weak waist and legs.

Side effects and contraindications of eating dried shrimp

People with chronic illnesses or those who are suffering from a sore throat should not eat shrimps. Elderly people with allergic rhinitis, bronchitis, and recurrent allergic dermatitis should not eat shrimps. Shrimp can cause wind, so people with skin scabies should avoid eating it.

How to make delicious shrimp

How to make shrimp skin:

Shrimp Tofu

Ingredients: 500g tofu (northern), 50g dried shrimp

Seasoning: 3g salt, 3g pepper powder, 5g green onion, 3g MSG

practice:

1. Remove the roots, wash and cut into chopped green onions; cut the tofu into thick strips.

2. Wash the dried shrimps, add salt, pepper powder, chopped green onion and MSG and mix well. Then put the tofu strips and seasonings into the pot in a layer, steam for 5 minutes and let cool.

Spicy Shrimp

Ingredients: 200g dried shrimp, 5 green peppers, 1 shallot, 1 small piece of ginger

Seasoning: 3 tsp sesame oil, 2 tsp salt, 1 tsp MSG

practice:

1. Wash the peppers, cut them into small diamond-shaped slices, blanch them in boiling water and let them cool;

2. Remove impurities from dried shrimps and clean them. Wash and chop green onions and ginger.

3. Heat oil, turn off the heat and add dried shrimps until golden brown. Remove from heat.

4. Mix the dried shrimp, chili, chopped green onion, chopped ginger, salt, MSG and sesame oil and serve.

Dried Shrimp

Ingredients: 250g square dried tofu (or tofu skin), 1 green onion, 20g dried shrimp skin, 30g spiced peanuts, 1 tablespoon (15ml) soy sauce, 1 teaspoon (5ml) sesame oil, 1/2 teaspoon (3g) salt, 1 teaspoon (5ml) balsamic vinegar

practice:

1. Carefully slice the square dried tofu (or tofu skin) into thin slices about 0.2 cm thick with a knife, then cut it into thin strips neatly. Then put it into cold water, stir it several times, and soak it for about 10 minutes to remove the bean smell.

2. Soak the dried shrimp skin in warm water for about 20 minutes. Rub off the outer red skin of the spiced peanut kernels, then chop them into small pieces for later use.

3. Put the soaked tofu shreds into boiling water and blanch for about 1 minute. Then remove them from the water, rinse them with cold water and drain them.

4. Peel the green garlic, cut it into thin strips with a slanting knife, blanch it in boiling water for about 10 seconds, then remove it from the water, rinse it with cold water, and drain it.

5. Add light soy sauce, balsamic vinegar, salt and sesame oil into a small bowl and mix well to make the sauce.

6. Mix the shredded tofu and green garlic evenly and place them on a plate. Sprinkle the soaked dried shrimp skin and spiced peanut crumbs on top.

7. Finally, pour in the prepared sauce and mix well.

Shrimp and Pumpkin Soup

Ingredients: pumpkin, seaweed, dried shrimps, eggs, oil, ginger slices, salt, and MSG.

practice:

1. Peel and deseed the pumpkin, wash and cut into thick pieces; soak the seaweed in water and rinse it clean;

2. Rinse the dried shrimps; beat the eggs into a bowl and stir into egg liquid;

3. Pour clean water into a pot and bring to a boil, add 1 tablespoon of oil, add pumpkin, dried shrimps and ginger slices, cook for 30 minutes, then add seaweed and cook for 5 minutes, pour in egg liquid and stir evenly, cook until done, add salt to taste and serve.

Efficacy: Protects the liver, nourishes the kidneys, and strengthens the body.

Shrimp and Winter Melon Soup

Ingredients: 650 grams of winter melon, washed, peeled and cut into slices, dried shrimp, ginger, cut into slices, and one garlic sprout.

practice:

1. When the water starts to bubble, pour in the winter melon and ginger slices, be careful;

2. When all the ingredients are poured in, I was too greedy and added too much winter melon. 450 grams of the skin should be enough.

3. When the winter melon becomes translucent, add the dried shrimps and continue cooking until it is completely transparent. Then add chicken essence and appropriate amount of salt. If you like white pepper powder, you can add a little.

Dried Shrimp and Egg Custard

Efficacy: Strengthens muscles and bones, increases the supplement of calcium, phosphorus and vitamin D, increases children's absorption of macroelements such as calcium and phosphorus, and prevents rickets in children.

Ingredients: one egg and a little dried shrimp.

Method: Wash the dried shrimps and soak them for a while, peel the eggs and beat them, add a small amount of warm water and salt, mix with the dried shrimps, and steam them over low heat.

Seaweed and Shrimp Soup

Ingredients: dry seaweed (10g), dried shrimp (10g) Accessories: egg (60g)

Seasoning: Vegetable oil (5g), cooking wine (5g), vinegar (5g), soy sauce (5g), MSG (3g), sesame oil (5g)

practice:

1. Wash and tear the seaweed for later use.

2. Crack the eggs and mix them in a bowl.

3. Wash the dried shrimps and soak them in cooking wine for 10 minutes.

4. Heat the vegetable oil over high heat, pour in the soy sauce and stir-fry. Immediately add 1 bowl of water, put in the seaweed and dried shrimp and cook for 10 minutes. Then add the egg batter and vinegar and stir slightly. When the eggs are cooked, remove from the pan and add MSG and sesame oil.

Efficacy: This soup can provide the necessary nutrients for the development of the fetal brain, which is very beneficial to the development of the fetus. It can also prevent osteoporosis in pregnant women and help to nourish the skin. It is the first choice of health and therapeutic soup during pregnancy.

Braised Tofu with Shrimp

Ingredients: 300g tofu (northern), 10g dried shrimp, 20g green onion

Seasoning: 3g soy sauce, 1g salt, 5g green onion, 3g ginger, 5g starch (pea), 20g vegetable oil

practice:

1. Blanch the tofu in salt water and cut into rectangular cubes; chop the green onion and ginger into fine pieces; wash and cut the green onion into sections.

2. Heat oil in a pan, fry the tofu until it turns slightly yellow, add soy sauce and a little water, put in scallion, chopped ginger and dried shrimp, stir-fry until well-flavored, add green onion, thicken with wet starch and stir-fry briefly.

Shrimp and Spinach Porridge

Ingredients: 100g glutinous rice, 60g spinach, 15g dried shrimp

Seasoning: lard (refined) (15g) salt (2g) MSG (1g)

practice:

1. Wash the japonica rice, soak it in cold water for half an hour, remove it and drain the water;

2. Wash the dried shrimps and soak them in warm water until soft;

3. Wash the spinach, blanch it with boiling water, cut it and set aside;

4. Add about 1000 ml of cold water to the pot, put in the rice, and boil over high heat;

5. Then add dried shrimps and lard, mix well, and simmer over low heat until it becomes porridge;

6. Add spinach, salt and MSG, stir well, and serve.

Shrimp and Kelp Soup

Ingredients: half a sheet of kelp, a handful of dried shrimps, 5 bowls of water (for cooking soup), 1/2 teaspoon of pepper powder, 1/2 teaspoon of ginger powder.

practice:

1. Wash the kelp and cut it into diamond-shaped pieces.

2. Boil water in a small pot, add kelp after the water boils, cook for 2-3 minutes after boiling, remove and set aside.

3. Pour clean water into the soup pot, add the cooked kelp in cold water, add ginger powder, bring to a boil over high heat, then simmer over low heat and add dried shrimps.

4. After cooking for about 20 minutes, add pepper.

Spinach and Shrimp Soup

Ingredients: spinach, dried shrimp, eggs

practice:

1. Blanch the spinach in boiling water in advance, rinse with cold water, and squeeze out the water;

2. Heat oil in a pan, add dried shrimps and stir fry;

3. After the dried shrimps are fried and change color, add appropriate amount of water and bring to a boil;

4. Add the blanched spinach and soaked black fungus and bring to a boil again;

5. Pour in the beaten egg liquid;

6. When the egg drops float, add appropriate amount of salt and serve.

Shrimp and Radish Soup

Ingredients: 20 grams of dried shrimp, 250 grams of shredded radish, 500 grams of broth, appropriate amounts of chopped green onion, MSG, shredded ginger, salt, and lard.

practice:

1. Cut the washed radish into shreds, rinse with boiling water and drain.

2. Heat the oil pan until it is 80% hot, stir-fry the chopped green onion and ginger, add the shredded radish, broth, salt, dried shrimps, boil over high heat, and add MSG. Nutritional effects: replenishes Qi.

Shrimp skin is sweet, salty and warm in nature. It has the effects of nourishing the kidneys and strengthening yang, regulating qi and stimulating appetite.
