When making shacha noodles, you need to prepare 500 grams of noodles, 100 grams of lean meat, 100 grams of pork liver, an appropriate amount of shrimp, 100 grams of green vegetables and 200 grams of fried tofu.

Steps for making shacha noodles

1. Wash the lean meat and cut it into slices. Wash the liver, remove the blood and cut it into slices. Remove the old leaves from the green vegetables and wash them clean. Remove the shrimp thread from the shrimp and wash them clean.

2. Marinate the cut pork liver with cooking wine and starch for about half an hour. Marinate the meat slices and shrimp with cooking wine, salt and starch respectively.

3. Put an appropriate amount of water in the pot, then add a small amount of salad oil, ginger slices, scallion knots and cooking wine. Heat and boil, then put the marinated meat slices, pork liver and shrimp into the pot and blanch them. After blanching, remove them and drain them for later use.

4. In another pot, add appropriate amount of water, bring to a boil and then add the noodles. Cook the noodles until done. Take them out and add vegetable oil and mix well.

5. Put the broth back into the pot, add cooking wine and ginger slices, bring to a boil, add the fried tofu and cook for five minutes, then add appropriate amount of shacha sauce, tomato sauce and peanut butter and mix well, then add minced garlic, salt, sugar and light soy sauce, mix well, add pepper and cook for ten minutes.

6. Put the green vegetables into the pot and boil, add chicken stock and turn off the heat. Put the cooked noodles in a large bowl, add the meat slices, shrimps, pork liver, fried tofu and green vegetables, then pour the cooked soup on top and serve.
