For this reason, I consulted the master chef in my hometown and learned the method of making five-nut mooncake filling at home. Now I write it down to share with you.

Ingredients for making five-nut mooncake filling

When making five-nut mooncake filling at home, you need to prepare 15 grams of black sesame seeds, 90 grams of cooked glutinous rice flour, 40 grams of walnut kernels, 60 grams of sunflower seed kernels, 15 grams of white sesame seeds, 45 grams of white sugar, 45 grams of cooking oil and 60 grams of water.

Specific steps for making five-nut mooncake filling

1. Place the prepared nuts on a baking tray and bake for five to eight minutes. Different nuts should be baked on different baking trays. Baking them together will easily cause the flavors to mix.

2. Take out the roasted kernels and let them cool down, then use tools to process them into minced meat for later use.

3. Put the prepared glutinous rice flour in a wok and fry it for a while, turning it over constantly until the glutinous rice flour turns yellow.

4. Mix the crushed nuts and glutinous rice flour together, then add a small amount of sugar, milk powder and an appropriate amount of table salt, mix well and set aside.

5. Put the evenly mixed powder into the pot, add cooking oil, water, raisins and a small amount of white wine, turn on the heat and stir-fry. Turn off the heat after stir-frying. Take out a small piece with your hands, and then roll it into a ball. The small ball should not ooze oil and should be dispersed. The homemade five-nut mooncake filling is ready to be eaten.
