To make the chili oil for cold noodles, you need to prepare 100 grams of dried red chili peppers, a small amount of peppercorns, ginger, aniseed, cinnamon and other seasonings, and a small amount of white sesame seeds.

Specific method of making cold noodles chili oil

1. Heat the wok until dry, put the dried red peppers and Sichuan peppercorns into the wok and stir-fry. Remember to use low heat and turn off the heat after about a minute.

2. Take out about one-third of the fried peppers and make them into pepper powder. Grind the other two-thirds into pepper powder.

3. Mix the prepared chili powder and chili powder together, then add a spoonful of salt and a spoonful of sugar. Also fry the white sesame seeds in the pan and add them in at this time.

4. Pour cooking oil into a cold pot, add ginger slices, star anise, cinnamon and other seasonings, turn on medium heat, and simmer slowly. After the ginger slices turn yellow, remove all the seasonings.
