1. Ingredients for Suzhou Pickled Pork Du Xian

1 fresh pig's trotter, 100g bacon, 100g Jinhua ham, 200g fresh winter bamboo shoots, some chives, 1 piece of old ginger, 1/2 teaspoon (3g) white pepper powder

2. How to make Suzhou Pickled Duxian

1) Soak the bacon in water for 12 hours to remove the excess salt. Then cut the bacon into small pieces. Then cut the Jinhua ham into thick slices. Then smash the old ginger. Remove the skin of the fresh winter bamboo shoots and slice them for later use.

2) Wash the pork trotter, boil it in water to remove the blood, rinse it, drain and set aside. Then put the pork trotter, bacon, ham slices, smashed ginger and some winter bamboo shoots into a casserole, add water, bring to a boil over high heat and then turn to low heat.

3) After stewing for about 50 minutes, the soup turns white. Add the remaining bamboo shoots and stew for another hour. Then add white pepper powder and chopped green onions.
