Steps to cook winter melon braised duck_Summer health food

When summer comes, we are all very thirsty, so eating winter melon and duck meat can satisfy your cravings and relieve the heat.

Ingredients for Braised Duck with Winter Melon

Winter melon, half a duck, green and red peppers, light soy sauce, dark soy sauce, cooking wine, ginger, onion, star anise, peppercorns, cinnamon, cloves, and tangerine peel.

Method/steps of braised duck with winter melon

1. Wash and drain the duck meat, and chop it into pieces; 2.

Peel the winter melon, clean it and cut it into cubes about 2 cm thick;

Slice the ginger, cut the green onion into sections, and cut the green and red peppers into pieces.

Put an appropriate amount of water in the pot, put the duck pieces in the cold water, add a few slices of ginger and scallions, and then add a little cooking wine. Blanch the duck pieces until they change color, then remove them, rinse off the blood foam on the surface with clean water, and drain the water.

Pour a little oil into a hot pan, add the duck pieces, and stir-fry until the duck pieces change color and release oil.

Add ginger, onion, star anise, pepper, cinnamon, cloves, tangerine peel and other seasonings and stir-fry. ​

Add cooking wine, dark soy sauce and light soy sauce and stir well to color.

Add enough hot water to cover the duck in the pot, and cover the pot.

Bring to a boil over high heat, then turn to medium-low heat and cook until only one-third of the winter melon is left in the pot. Add salt, stir-fry evenly, then simmer over low heat until the winter melon is cooked.

​Add green and red pepper cubes and stir-fry over high heat until the pepper cubes are cooked. ​

Precautions

If you like spicy taste, you can add some dried red pepper.

Use less oil when stir-frying duck meat, and stir-fry slowly over medium-low heat until the duck meat shrinks and releases oil.

The green and red peppers are for garnishing, but you can just leave them out if you don’t have them at home.
