Tips for frying loofah without discoloring: If you don't fry the loofah right after cutting it, you should soak it in salt water, because the peeled loofah will discolor when it comes into contact with air.

When buying loofah, you should choose fresh, firm and shiny ones with tender green or light green skin, full flesh at the top and no bloated feeling.

If the skin is dry and wrinkled, or the body is swollen and has spots and depressions, the melon is overripe and cannot be eaten. Loofahs tend to turn black because they are easily oxidized.

If it turns black, you need to cut and stir-fry it quickly, or you can wash it with water after peeling it, rinse it with salt water, or blanch it in boiling water.
