Lotus seeds symbolize harmonious marriage; longan symbolizes reunion; kumquat symbolizes auspiciousness; red dates symbolize early birth of a son; candied cherries and candied winter melon symbolize sweetness; melon seeds are a variation of the drum board, symbolizing a regular life and peace without disasters; red plum silk is the same color as the dragon gate, which means encouraging progress and blessing success; green plum silk represents pine, symbolizing longevity.

I think that Eight Treasure Rice Pudding can be slightly changed according to your own preferences or the availability of raw materials. You can't stop making Eight Treasure Rice Pudding just because you can't buy a few ingredients. In short, the ingredients have changed, but the beautiful meaning and taste will not change. For example, when I was making Eight Treasure Rice Pudding, I couldn't buy candied kumquats, candied cherries, candied winter melons, and red plums, so I replaced them with raisins, dried cherry tomatoes, wolfberries, and dried mangoes, which are more common candied fruits on the market. And I also made a slight improvement when I was making it. Before making it, I soaked them in rum for a few hours. After doing this, the candied fruits will have a light aroma of wine, which not only relieves greasiness but also makes it more tempting. And this time, I put the Eight Treasure Rice Pudding in a pumpkin. Using pumpkin as a container not only looks good, but also more nutritious.

Pumpkin Eight Treasure Porridge

1. Soak glutinous rice and red beans for more than 4 hours in advance

2. Wash the red beans and soak them in clean water for 4 hours, which can reduce the time of cooking the beans later.

3. Put the red beans into the pot, add appropriate amount of water and boil over high heat, then turn off the heat and simmer for one to two hours without opening the lid.

4. Soak your favorite candied fruit in rum for one hour. If you don’t have any wine, you can use warm water.

5. Put the long round glutinous rice soaked for more than 4 hours in advance on the steamer cloth, spread it out in the steamer, steam for half an hour, and simmer for 5 minutes

6. Cut the pork fat into small cubes and put them into the pot

7. After repeated frying, a lot of oil will be produced.
