Scrambled eggs with tomatoes is a very common dish, and many people like to eat it. So here is how to make scrambled eggs with tomatoes:

Fried Tomatoes Instructions:

Everyone can make scrambled eggs with tomatoes, but it is difficult to make it delicious. This is mainly due to several misunderstandings, which I will explain in detail later.

Ingredients for fried tomatoes:

Tomatoes, eggs Ingredients: vegetable oil, salt. Note that you don’t need to add chicken powder or MSG to scrambled eggs with tomatoes, because scrambled eggs with tomatoes are meant to be “fresh”, and when scrambled eggs with tomatoes have substances that form umami, there is no need to add MSG or chicken powder to enhance the freshness. This is also the reason why onions, ginger, and garlic are not added when making this dish.

Preparation method:

1. Cut the tomatoes into pieces of different sizes and shapes. Crack the eggs into a bowl, beat them well, and add a little salt.

2. Put an appropriate amount of oil in the pan (when frying eggs, the amount of oil is critical. My experience is to put 2/3 of the egg liquid). When the oil is hot (I will talk about how to judge the temperature of the oil in detail later), pour in the egg liquid. Note that at this time, the egg liquid will naturally solidify. Do not move it. When the egg liquid is solidified (be careful that the oil dries up and causes the eggs to be mushy), use a spatula (also called a frying spoon) to gently enter from the edge of the egg, turn the egg over, fry it, and when both sides are golden yellow, take the egg out of the pan (you can also choose not to take it out, but wait until you are proficient). At this time, there should be some oil in the pan. Turn the tomatoes in and stir-fry for a few times. Since tomatoes contain a lot of water, water will precipitate. At this time, put the fried eggs in, add a little salt, stir-fry for a few times, and serve.

PS: Some people like to add some water when cooking, but I don’t recommend it. In fact, the water content of tomatoes is enough, so there is no need to add water. Also, the quality of tomatoes nowadays is not good, and the dishes cooked out are not sweet and have a bit of bitterness. You can add some white sugar when serving.
