How to make duck and winter melon soup at home

It’s also a good idea to make some old duck and winter melon soup when you have nothing to do. Let me tell you how to make it.

Ingredients

Ingredients: half a duck (preferably an old duck), 500 grams of winter melon, 100 grams of ham, some scallions and ginger, 15 grams of cooking wine, and some salt.

Steps/Methods

After slaughtering the live duck, remove the feathers and internal organs (you can ask the stall owner to do it for you), wash it and cut it into large pieces;

Put it in a pot, add water and boil for 2 minutes, then remove and wash off the floating foam;

Peel and seed the winter melon, wash and cut into pieces, and slice the ham;

Put the blanched duck and ham slices into the pot, add enough water, add scallions and ginger slices and bring to a boil;

Add cooking wine to remove the fishy smell, turn to low heat and simmer for 1 hour;

Add winter melon and continue to simmer on low heat for 15 minutes, then add salt to taste.
