1. Noodles: Knead the noodles in advance (it is best to let them rest for 1 hour), and make them slightly harder than boiled noodles. (Or buy a machine, and get the finer ones).

2. Beans: Wash and break into 1-inch pieces. (For a family of three, about 2 jin is enough)

3. Pork: cut into thin slices (the amount and fatness depends on personal preference. If it is lean, add a little more oil when frying)

4. Shredded green onion, sliced ​​ginger, and star anise.

5. Half a small bowl of boiled water (or cold boiled water or purified water) + 1 teaspoon of vinegar (more or less depending on personal preference) + a little sesame oil + mashed garlic (optional)

1. Heat a slightly deeper iron pan (hot pan with cold oil), add a large amount of spices, wait for the oil to heat up, add the meat, stir-fry until it changes color, add soy sauce and salt, stir-fry until the aroma comes out (about half a minute), add chopped green onions and ginger slices, stir-fry for about half a minute, then add beans and stir-fry for about 1 or 2 minutes. Pour about 1 bowl of water and turn to low heat

2. Roll the dough into a large sheet of about 1 or 2 mm thick. Spread out the dough, sprinkle more dry flour on the large sheet, and roll up the large sheet of dough with a rolling pin. Use a knife to cut the dough along the length of the rolling pin to form a dough about 10 cm wide (the diameter of the rolling pin). Then cut it into short and thin noodles.

3. Now look at the pot where the vegetables have been cooked, and change the heat to medium to ensure that there is enough steam (if there is too much water, pour out some of it first, and the water left in the pot should just not cover the beans). Sprinkle half of the noodles evenly on the vegetables, cover and simmer for 2-3 minutes, shake the noodles with chopsticks to prevent them from sticking, then add the remaining noodles and simmer for another 2-3 minutes. Finally, pour half a bowl of water (as shown in Preparation 5) on the noodles, cover and simmer for 1-2 minutes (if there is too much water, simmer for a while longer, and the water in the pot should be only 1cm before turning off the heat). Turn off the heat. Cover and simmer for another 1-2 minutes. Lift the lid, mix well and you can eat.
