Introduction to Fungus

There are two types of fungus, black fungus and white fungus, which belong to the family Auriculariaceae. They parasitize on decaying trees, mainly mulberry, locust, willow, elm, and paper mulberry. They were called five fungus in ancient times and are now cultivated artificially. Both are sweet and mild in nature, non-toxic, and can be used as a tonic and medicinal food. However, in terms of specific applications, the effects of the two are slightly different.

Fungus porridge is recorded in Guiyifang. It is made by boiling white fungus or black fungus and polished rice with water. It nourishes the lungs and stomach, replenishes qi and nourishes deficiency, and stops bleeding. According to Lunzhi Jieshuo, fungus is sweet, mild and non-toxic, and is a good tonic. White fungus is a particularly precious nourishing product. Shennong's Herbal Classic says: "It replenishes qi and prevents hunger, lightens the body and strengthens the mind." It can be made into porridge with glutinous rice to invigorate the stomach qi and further enhance the nourishing effect. It is suitable for both young and old.

White Fungus

Introduction

White fungus is also known as Tremella. It has high nutritional value, and its main medicinal effects are clearing lung heat, benefiting the spleen and stomach, nourishing yin and promoting fluid, invigorating qi and activating blood circulation, moistening the intestines, detoxifying alcohol, promoting fluid, nourishing the brain, and strengthening the heart. It enters the lung, stomach, and kidney meridians, so it can clear lung heat, benefit the spleen and kidney, and nourish the kidney dryness. It is made into porridge with rice and is mostly used to treat lung heat cough, dry cough due to lung dryness, coughing up blood in sputum, dry heat in the stomach and intestines, constipation and bleeding, irregular menstruation, as well as vascular sclerosis and hypertension. Soak 30 grams of white fungus in clean water for several hours, put it in a bowl, add water and appropriate amount of white sugar or rock sugar, boil it in water for 2 hours, or simmer it for 1 hour, and eat it on an empty stomach in the morning. It can treat tuberculosis, coughing up blood, or blood in sputum, lung abscess, constipation, irregular menstruation and other symptoms. Generally, stop taking it when you have a cold. When taken with food, soak 50g of white fungus in water for several hours, remove the hard knots on the back, brew it with boiling water twice, wring it dry, cut it into thin strips, fry it with scallion oil, add an appropriate amount of fine salt and pour it on top. The ancients believed that white fungus is a nourishing medicine for the lungs. For dry cough caused by lung heat, cough with phlegm, or hemoptysis caused by tuberculosis, mixed blood in phlegm, blood in stool, etc., cooking porridge with white fungus is effective as a nourishing and supplementary treatment.

Precautions

Tremella is a cool food. People with colds and coughs caused by wind and cold, coughs with phlegm caused by damp heat, or people with yang deficiency and fear of cold should not eat Tremella. People who have diarrhea after eating Tremella should not eat it.

Black Fungus

Introduction

Black fungus is also called mulberry ear, which has the functions of nourishing, benefiting the stomach, activating blood circulation and moistening dryness. It is suitable for symptoms such as metrorrhagia, hemorrhoid bleeding, bloody hemorrhoids and bloody stools; it is also suitable for hypertension, constipation, etc. Ancient doctors believed that fungus and rotten wood are born, and they have the disadvantages of weakening essence and cooling the stomach. The functions of black and white fungus are roughly the same, but the economic price of white fungus is higher. Clinically, black fungus is often used, which is both economical and nutritious.

The medicinal effects of black fungus are mainly to nourish the stomach, calm the mind and relieve dryness, and promote blood circulation and remove blood stasis. It can treat accumulation of symptoms, hemorrhoid bleeding, bloody diarrhea, metrorrhagia in women, as well as hypertension, constipation and other diseases. Patients with hypertension, vascular sclerosis, and fundus hemorrhage can use 30 grams of black fungus, soak it in water, remove the hardened sand on the back, wash it, cook it in a rice cooker for 1-2 hours, add appropriate amount of rock sugar, and take it before going to bed. It can also be eaten in stir-fried dishes and soups. Long-term consumption has a nourishing effect. People with diarrhea should not eat it.

Precautions

Patients with hemoptysis, hematemesis, and blood in the stool should not eat black fungus. In addition, dried fungus should be soaked in warm water before cooking. The parts that are still tightly together after soaking should not be eaten. Fresh fungus contains toxins and should not be eaten.

Differences and similarities

Both contain protein, fat, carbohydrates, cellulose, and various minerals such as phosphorus, iron, calcium, magnesium, and potassium. Pharmacological experiments have shown that they can strengthen the heart, constrict blood vessels and stop bleeding, and can improve the strength of blood vessel walls. Therefore, they are often used to treat arteriosclerosis and hypertension.

In terms of nutrient content, there is a big difference between the two.

The protein content of black fungus is 12.1 grams, and that of white fungus is 10.0 grams, which is equivalent to 82.3% of that of black fungus.

The carotene content of black fungus is 100 micrograms, and that of white fungus is 50 micrograms, which is equivalent to 50% of that of black fungus.

The vitamin E content of black fungus is 11.34 mg, and that of white fungus is 1.26 mg, which is only 11.1% of that of black fungus.

The calcium content of black fungus is 247 mg, while that of white fungus is 36 mg, which is only 14.6% of that of black fungus.

The iron content of black fungus is 97.4 mg, while that of white fungus is 4.1 mg, which is only 4.2% of that of black fungus.

The zinc content of black fungus is 3.18 micrograms, and that of white fungus is 3.03 micrograms, which is equivalent to 95.3% of that of black fungus.

The selenium content of black fungus is 3.72 micrograms, and that of white fungus is 2.95 micrograms, which is equivalent to 79.3% of that of black fungus.

It can be seen from this that although the medicinal properties of the two types of fungus are similar, in terms of nutritional value, the white fungus is slightly inferior to the black fungus.
