How to make cold enoki mushrooms

[Ingredients]: Enoki mushrooms, cucumber, smoked ham, olive oil, mustard, light soy sauce, salt, and sugar.

1. Wash the cucumber and cut the smoked ham into strips;

2. Cut off the roots of the enoki mushrooms, wash them, blanch them in boiling water for 30 seconds, remove them and drain;

3. Mix all the seasonings to make a sauce;

4. Mix the enoki mushrooms, cucumber, and smoked ham, pour the sauce over them, and mix well!

Ingredients for cold enoki mushrooms:

Ingredients: 3 liang of enoki mushrooms, half a cucumber, five or six carrots

Ingredients: 2 scallions[1] 2 cloves of garlic

Accessories: 1 spoon of soy sauce, 2 spoons of vinegar, 1/2-1 spoon of honey, 10 peppercorns, 2 spoons of vegetable oil, half a spoon of oyster sauce

Steps for making cold enoki mushrooms:

1. Enoki mushrooms: wash, blanch in boiling water for 1 minute, rinse with cold water

2. Cut the cucumber into strips and place on top

3. Cut the carrot into strips and place them on top

4. Put half a spoon of chili powder and chopped green onion on top to make it easier to cook in oil.

5. Put two spoons of vegetable oil in the pot, add 10 peppercorns and fry until the peppercorns turn black and the oil smokes. Pour the peppercorns and chopped green onions while they are still hot. Finally, add mashed garlic, light soy sauce, oyster sauce, vinegar, honey and appropriate amount of salt.

Tips for cold enoki mushrooms:

1. The juice for the cold dish can be mixed with mashed garlic according to the proportion of soy sauce, vinegar, honey and oyster sauce in the raw materials. The method of making mashed garlic is the same as the one I usually use to make cold dishes.

2. In fact, it is best to blanch carrots in hot water to make them more nutritious. I was lazy today and didn’t blanch them, so I’m telling you the truth.

3. Honey is softer than white sugar. If you don’t have it, you can use half a spoonful of white sugar instead.
