1. One cabbage and an appropriate amount of vermicelli (soaked in cold water overnight).

2. Wash the cabbage and cut it into long strips.

3. Pour a little oil into the pan, turn on low heat, add the peppercorns and fry until fragrant.

4. Cut chili pepper (if you don’t have any, you can use dried chili pepper soaked in warm water) into small pieces.

5. Skim off the fried Sichuan peppers in the pan, add the chili peppers, turn on high heat and immediately add the cabbage and stir-fry.

6. Add a spoonful of salt, a spoonful of chicken essence, a spoonful of light soy sauce, and half a spoonful of white sugar. Stir-fry until the cabbage becomes soft, then add the vermicelli. After it becomes soft, add a spoonful of dark soy sauce to color it.

Tips

1. Use sweet potato flour or potato flour for vermicelli, which is chewy and not easy to break;

2. Use cold water to soak the vermicelli overnight, because compared with boiling water, the vermicelli soaked in cold water is more chewy;

3. The overall ratio of the vegetables should be 2/3 cabbage and 1/3 vermicelli.

4. When frying vermicelli, you can add a little cold water to prevent it from sticking to the pan.
