Flavored eggplant method 1:

Raw material preparation:

Long eggplant, green pepper, oil, salt, pepper, starch, sugar, dried red pepper, ginger, garlic, appropriate amounts

Steps:

1. Wash the green pepper and cut it into strips, peel the garlic and cut it into thin slices, and cut the ginger into slices for later use.

2. Wash the eggplant, cut it into dice shape and coat it with dry starch.

3. Put an appropriate amount of cooking oil in the pot. When the oil is hot, put the eggplant in and fry until it turns slightly yellow. Remove from the pan and drain the oil.

4. In another pot, add appropriate amount of oil, add peppercorns, ginger slices, garlic slices and dried red peppers and stir-fry until fragrant.

5. Add appropriate amount of white sugar and mix it with oil to make soup.

6 Pour the eggplants that have been drained of oil into the pot and let the eggplant strips be evenly coated with the soup.

7. Pour in the green pepper strips, add appropriate amount of MSG, stir-fry for a few times and it is ready to serve.

Flavored eggplant method 2:

Ingredients: eggplant, green and red peppers, coriander, garlic, cooked sesame seeds, dried pepper segments, aged vinegar, sugar, MSG, and oil in appropriate amounts

Steps:

1. Wash the eggplants and cut them into long rolling knife shapes with the skin on.

2. Peel the garlic and cut into slices; cut the green and red peppers and coriander into long strips for later use

3. Pour a proper amount of oil into the pan, add the eggplant when the oil is 50% hot, fry over medium heat until crispy on the outside and tender on the inside, remove from the pan and drain the oil for later use.

4. Leave a small amount of oil in the pot, add dried chili segments and fry until fragrant, add aged vinegar, sugar, MSG and other seasonings to boil the juice. When the juice becomes thick, add eggplant, add green and red pepper shreds, coriander, and sesame seeds, mix well and it is ready to eat.
