I learned this soup from my father. He fried the whole head of a baotou fish and put it in hot water. He also added dried shrimp, ham, enoki mushrooms and dried shrimp. In my own kitchen, I replaced the baotou fish with yellow croaker, reduced the dried shrimp, and increased the clams to make this very rich and delicious yellow croaker and clam soup. So, whether you use baotou fish, sea bass, mandarin fish or other fish, it’s all fine. Remember to use a clay pot to stew the soup to keep it warm. It will taste warmer when it’s cold.

Ingredients for Yellow Croaker Clam Chowder

1 yellow croaker, clams, enoki mushrooms, 1 tomato, a little ham, ginger, green onions, and coriander.

How to make yellow croaker clam chowder

1. Kill the yellow croaker, clean it, wipe off the moisture, make 3 cuts on each side, and evenly apply a little salt to marinate; cut the ham and ginger into thin slices, cut the green onions into sections, tear the enoki mushrooms, blanch the tomatoes in boiling water, peel them and cut them into slices;

2. Heat the oil in a pan, add the yellow croaker and fry both sides until slightly charred, add ginger and scallions and fry until fragrant;

3. Add enough hot water to cover the yellow croaker. Add the ham slices, cover the pot and cook on medium heat for 5 minutes. Then add the enoki mushrooms and continue to cook for 2-3 minutes. Finally, add the clams and tomatoes and cook for 1 minute. Season with salt and white pepper before serving.

Food experience:

1. You can choose yellow croaker, Baotou fish, crucian carp, and mandarin fish;

2. After the fish is fried, you can put it in a casserole, heat it up and add boiling water to make soup;

3. Remember the order in which you put the ingredients. At the end, just cook the clams and tomatoes until they open. Do not cook them too long to prevent them from becoming overcooked.

4. Add pepper powder to remove the fishy smell and enhance the flavor. You can also sprinkle a little coriander or green onion at the end to enhance the flavor according to personal taste.
