1. When making candied ginger slices, be sure to choose fresh ginger shoots, and remove the tender shoots of the ginger shoots. Then wash the ginger shoots with clean water and cut them into slices about three millimeters thick with a knife.

2. Soak the cut ginger slices in clean water for four to five hours. Change the water two to three times in the middle. This will remove some of the spiciness of the ginger and make the finished ginger slices taste better.

3. Put not too much water in the pot, put the rock sugar in, boil the water over medium heat, and then melt all the rock sugar. Put the cut ginger slices into the pot. The ratio of ginger to sugar can be between 1:0.7 and 1:1.

5. After the ginger slices become transparent, continue frying for a while until all the syrup in the pot sticks to the ginger slices and the surface of the ginger slices is dry.
