Prepare the Materials

When making fried noodles with soybean paste, the preparation of ingredients is very important. In addition to 500 grams of hand-rolled noodles, you also need to prepare 400 grams of pork belly, an appropriate amount of minced ginger, cooking oil, cooking wine and sugar, two scallions and 400 grams of yellow sauce, and finally an appropriate amount of chicken essence.

Steps

1. Put the prepared yellow paste in a large bowl, add appropriate amount of cooking wine and cold water to make a paste, then filter it with a colander to remove the bean dregs, and steam the obtained yellow paste in a pot for 20 minutes. Wash the pork belly and cut it into dices.

2. Heat oil in a wok, add the diced pork belly and stir-fry until it changes color. Add appropriate amount of minced ginger and chopped green onion leaves. After frying until fragrant, add the steamed yellow paste into the wok, stir-fry quickly, then turn down the heat and add a small amount of white sugar.

3. Chop the remaining scallion into chopped green onion. When a layer of translucent fat appears on the surface of the sauce in the pot, turn off the heat and add the chopped green onion and chicken essence into the sauce and mix well. After the sauce is ready, you can also cut appropriate amounts of cucumber shreds, green garlic chopped, and Chinese toon chopped, and blanch bean sprouts in boiling water as a side dish for fried noodles.

4. Heat clean water in a pot. After boiling, put the prepared hand-rolled noodles into the pot and cook them. Take them out and rinse them with water. Then put them in a large bowl and pour the fried sauce on them. Then put the prepared side dishes on the surface of the noodles. A bowl of fragrant and tempting fried noodles is ready to be eaten.
