Shiitake mushrooms contain ergosterol, which will be converted into vitamin D after exposure to sunlight. However, if you wash them excessively or soak them in water before eating, you will lose a lot of nutrients. You should not use iron or copper pots to cook shiitake mushrooms, as this will cause nutritional loss.

Spinach contains a lot of oxalic acid, so it is not suitable for children to eat too much. Oxalic acid reacts with calcium and zinc in the human body to form calcium oxalate and zinc oxalate, which are not easily absorbed and excreted from the body, affecting the absorption of calcium and zinc in the intestines, and easily causing calcium and zinc deficiency in children, leading to poor development of bones and teeth, and also affecting intellectual development.
