Tips on how to cook porridge in a casserole

I believe everyone knows that porridge cooked in a casserole tastes very delicious. Let’s learn about it below.

Casserole

Characteristics of clay pots: Strong heat preservation ability. Porous texture, can absorb and release food flavor in small amounts. When first bought, it needs to be processed (for example, boiled with rice washing water) to prevent it from breaking easily. Not resistant to temperature changes, mainly used for slow cooking over low heat. Because it is a pottery product made of quartz, feldspar, clay and other materials that are not easy to transfer heat, it is fired at high temperature and has the characteristics of air permeability, adsorption, uniform heat transfer, and slow heat dissipation. The clay pot can transfer external heat energy to the internal raw materials in a balanced and lasting manner. The relatively balanced ambient temperature is conducive to the mutual penetration of water molecules and food. The longer this mutual penetration lasts, the more fresh and fragrant ingredients overflow, the fresher the taste of the stewed soup, and the crispier the texture of the stewed food.

Introduction to casserole

Why do many people's newly bought clay pots crack after just a few cookings? That's because they didn't maintain it well and used it incorrectly. Let me teach you how to use and maintain a clay pot.

1. The first step is of course to clean it. Use a soft cloth and clean water to rinse it inside and out.

2. After washing, let's cook porridge first. We need to "feed" the pot. Why cook porridge? Because it is made of clay, the clay has "eyes" and gaps. Cooking porridge can repair these "small holes" in the pot that we can't see, thus extending its service life.

3. Cook slowly over low heat, stirring with a wooden spatula

4. You can pour the porridge water on the upper part, where the porridge water cannot reach, so that the upper part of the inner wall of the pot can also be moistened, allowing it to "drink the porridge water"

5. Turn off the heat when the porridge becomes sticky. Do not let it cool down quickly after leaving the heat. Use a pot mat to keep it cool.

6. It takes a long time to make soup. During this time, we can do many other things. But in order to prevent the soup from drying up and breaking into pieces, you can prepare an alarm clock or timer to warn yourself.

7. Leave the cooked porridge overnight. When you wake up in the morning, you will see how delicious the porridge is. But we will not eat this porridge. We will just use it as a "washing pot porridge". After doing this, we can start to cook delicious soup.

Maintenance of casserole: Casserole is a ceramic product made of quartz, feldspar, clay and other materials. After high temperature sintering, the pot body forms a glass body. This glass body has poor adaptability to temperature differences. The casserole will expand or contract rapidly when heated or cooled suddenly, thus causing cracks. In view of this characteristic of casserole, the following aspects must be paid attention to when using it:

1. Heat gradually, do not suddenly burn on high heat to avoid bursting.

2. After cooking the food, when the casserole is off the fire, use wood chips to prop up the pot to evenly dissipate heat and cool slowly to avoid shrinkage and cracking. You can also make an iron ring according to the size of the casserole. When the casserole is off the fire, place it on the iron ring so that its bottom does not directly touch the ground. It will cool down naturally in the air, which can make the casserole last longer.

3. Newly bought clay pots often leak because they have many sand holes. When using a new pot for the first time, it is best to make noodle soup or porridge. After eating, do not wash the pot first, put it by the stove to bake, so that the batter in the pot dries and blocks the tiny sand holes on the pot wall, and then wash it. In this way, the clay pot will not leak.

The most important thing is: do not wet the bottom of the pot. Try not to wet the bottom of the pot when washing it, and make sure the bottom of the pot is dry when heating it. Wipe the outside of the casserole dry before each use.

The above are the usage and maintenance methods. It's amazing, right? Because I also like to drink casserole porridge. I hope these can help friends who love casserole porridge.
