2. Processing materials

When pickling cucumbers, you must handle the cucumbers carefully. The most important thing is to remove the flowers and stems, wash them with clean water, and then add the prepared salt and mix well before pickling. Put a heavy object on the top, and after pickling for 24 hours, pour out the water and dry the surface water for later use.

3. Marinating steps

After processing the cucumber, put a small amount of cooking oil in the wok, heat it, add the prepared peppercorns, dried red peppers and other spices, stir-fry over low heat, then add soy sauce, white vinegar, aged vinegar and sugar, heat and boil, and simmer for about ten minutes. Cut all the prepared ginger and garlic into slices, put them in the cucumber, then pour in the cooked sauce, and finally add sesame oil, marinate for about 24 hours, and the homemade cucumber pickles will be ready.

The method of pickling cucumbers is not complicated, but you must be careful when pickling. The container for pickling cucumbers cannot have raw water, and it must be sterilized at high temperature before pickling. One-year cucumbers will deteriorate during the pickling process.
