1. Wash 500 grams of hawthorn in clean water, then take a chopstick, point it at the hole on the big head of the hawthorn, and use force to poke the core out.

2. Add clean water into the pot. The amount of water should be based on the amount of soup you want to make. I usually choose to use 600 grams of water.

3. Heat the water in the pot until it boils, then add 250 grams of rock sugar into the water and let it melt over low heat.

4. After you see that all the rock sugar in the pot has melted into the water, you can pour in the pitted hawthorns, then cook slowly over medium heat until the hawthorns in the pot are soft and the soup is thick, then turn off the heat.
