The most important thing when making rice wine is to prepare an appropriate amount of glutinous rice and koji, and then to prepare an appropriate amount of boiled water.

Specific steps for making rice wine

1. Wash the prepared glutinous rice in clean water, then soak it in cold water for 24 hours. Change the water every eight hours during the soaking process. When changing the water, take out the glutinous rice and rinse it with clean water two or three times, then add new water to soak it.

2. After the glutinous rice is soaked, take a piece of cage cloth and place it on the steaming grid of the rice cooker, then put the rice on it, cover the pot and steam the rice. After it is steamed, pull up the cage cloth around to wrap the rice tightly, and then continue to steam it for about half an hour.

3. Wash the container for making rice wine, remove the water, and make sure there is no oil stain. Pour the boiled water into the container to sterilize it. Put the koji in a small bowl and add an appropriate amount of cold boiled water to mix well.

4. Take out the steamed glutinous rice and put it into a sterilized container, add appropriate amount of cold boiled water and mix well. Then put the dissolved koji into the rice and mix well. Flatten it, dig a round hole in the middle, and then put it into the rice wine machine. Select the rice wine function button. After thirty-six hours, the rice wine will be fermented. Take it out and seal it for storage. Take it out and eat it when needed.
