How to pickle northern sugar garlic

1. The ingredients for northern pickled garlic are 10 kilograms of fresh garlic, about 1 kilogram of rice vinegar, 2 kilograms of white sugar, and 2 kilograms of salt.

2. How to make northern pickled garlic 1) First, remove the roots and pseudostems of the fresh garlic, peel off some of the old green skin, then wash it clean, and then put it in a large bowl for later use, then add half a pound of salt, and then stir it evenly, and marinate it for a day.

2) When pickling the northern sugar garlic, turn it over three or four times a day to allow the ingredients to penetrate evenly into the northern sugar garlic. At this time, there will be some salt water in the basin. Pour out the water, and then soak the northern sugar garlic in clean water for three days.

3) During these three days, the water must be changed every day, otherwise the water will become smelly. After three days, take out the garlic and drain the water, then pour it into the pickle jar, and then add 1.5 pounds of salt and 2 pounds of sugar.

4) Bring the water to a boil, then let it cool down and pour it into the northern pickled garlic. Make sure the water is enough to submerge the northern pickled garlic. Cover the lid and place the jar in a cool place. It can be eaten after being pickled for about 20 days. It is best to pour rice vinegar into the pickle jar three days before eating.
