Fried Cowpea

1. Remove the old stems of cowpeas and cut them into small sections. Cut the chili peppers into sections. Bring the water to a boil, pour in the cowpea sections and chili pepper sections, add a little corn oil and salt and blanch for about 3-4 minutes.

2. Chop ginger and garlic into fine paste, add appropriate amount of sugar, soy sauce, and balsamic vinegar, heat 1 tablespoon of sesame oil and pour it into the bowl to make seasoning;

3. Take out the blanched cowpeas, soak them in ice water until they are cool, then take them out and drain them thoroughly;

4. Mix the seasoning, cowpea and chili.

Ginger Cowpea

[Ingredients] 200g cowpea, 40g ginger, about 25g sesame oil, salt, chicken essence, vinegar

Ginger Cowpea

1. Remove the old tendons from the young cowpeas, wash and drain, and cut into 4 cm long sections;

2. Add a little salt and oil to boiling water, blanch the cowpeas, do not cover during cooking, remove and drain for later use;

3. Rub the ginger into a paste with a tool, or blend it in a blender;

4. Mix the cowpea with ginger paste and seasonings, then serve.

Sesame Cowpea

[Ingredients] 250 grams of cowpea, garlic, sesame paste, sesame oil, salt, sugar, chicken essence, vinegar and chili oil in appropriate amounts.

1. Wash the cowpeas, remove both ends, and cut into inch-long pieces.

2. Boil water in a pot. After the water boils, put a small amount of salt and oil in the pot.

3. Add the cowpeas and blanch until they turn emerald green.

4. Take out immediately and soak in ice water prepared in advance.

5. Take a bowl, put in sesame paste, add the same amount of sesame oil, dilute the sauce, add salt, sugar, chicken essence, vinegar and chili oil.

6. Put the cowpea into the sauce, add chopped garlic and mix well.

Sesame Garlic Cowpea

[Ingredients] 250g cowpea, minced garlic, sesame oil, sesame paste, chicken essence, vinegar, and salt as appropriate.

1. Wash the cowpeas, remove both ends, and cut into inch-long pieces.

2. Boil water in a pot. After the water boils, put the cowpeas in and blanch them until they turn emerald green.

3. Take out the blanched cowpeas and cool them with cold water. Drain the water and place them on a plate.

4. Add appropriate amount of sesame paste diluted with sesame oil, ultra-fresh sauce, vinegar, salt and chicken essence and mix well.
