How to fry eggplant

1. Wash the eggplant, peel it, cut it into thin slices, sprinkle with salt and pepper, mix well and coat it with flour; then beat the eggs and milk together, dip the eggplant in the egg and milk paste and set aside.

2. Use a frying pan, add a little vegetable oil, and put the eggplant in after it is slightly hot. Fry both sides until golden brown and take out before eating.
