Pumpkin Rice

I remember that I loved eating pumpkin rice when I was a child. It was fragrant and sweet. Here is how to make it.

Pumpkin Rice Ingredients:

400 grams of pumpkin, 200 grams of rice, 2 tablespoons of cooking oil, 1 teaspoon of salt, 500 ml of water.

Pumpkin rice method:

1. Peel and seed the pumpkin and cut it into small pieces; wash the rice and set aside;

2. Pour 2 tablespoons of cooking oil into the wok and heat it until it is 70% hot, then pour in the pumpkin cubes and stir-fry for 1 minute;

3. Pour in the washed rice and pumpkin and stir well. Then add about 500 ml of water to just cover the rice. Cover the pot and simmer on medium heat for 10 minutes. Then open the lid, add salt and stir evenly. Cover the pot again and simmer on lowest heat for 15-20 minutes until the water is dry.

2. Pumpkin is warm in nature, so people with excessive stomach heat, qi stagnation, and damp-heat qi stagnation should eat less. People with athlete's foot, jaundice, and qi stagnation and dampness should avoid eating it.
