They are specially cultivated as vegetables, suitable for cooking or processing, and there are many excellent varieties. The long cowpeas in the growing period are hanging flowers and not fruiting. For example, early-maturing varieties include Red Mouth Swallow, Zhijiang 28-2, Sichuan Five Leaves, Chongqing Erba Cowpea, Guangzhou Tiexianqing, Longyan Seven Leaves, Guizhou Qingxian Cowpea; mid-maturing varieties include Sichuan White Fat Beans, Wuhan White Eel Bone, Guangzhou Dayeqing; late-maturing varieties include Sichuan Bailu Cowpea, Guangzhou Jinshan Beans, Zhejiang 512, Guizhou Fat Cowpea, Jiangxi, Guangzhou August Cowpea, Linong Gaoyou No. 4, Zhijiang 14, 28-2 Cowpea, Zhijiang Special 80, etc.

There are many pods, which are white-green in color with purple-red at the ends. The pods are about 55 cm long and of medium quality. The seeds are black and the yield per mu is about 1,250 kg.

(2) Zhijiang 28-2 was developed by the Horticulture Institute of Zhejiang Academy of Agricultural Sciences. Climbing nature: The main vine bears pods. The first inflorescence grows at the 4th to 5th nodes, and there are inflorescences at every node after the 7th node. The young pods are light green, with many pods, early maturity and high yield, good quality, pod length of 65-75 cm, strong heat resistance, wide adaptability, strong resistance to aphids and mosaic virus, red-purple seeds, can be cultivated in spring, summer and autumn, and the yield per mu is more than 1750-2000 kg. It has become one of the main cultivated varieties in the country.

(3) The wiregrass has a green vine with 2-3 branches. The main vine begins to bloom from the 5th to 6th node. The young pods are dark green, 45-50 cm long, red at the end, and the seeds are light red. It is cold-resistant and has good quality.

(4) August cowpea, such as Jiangxi Sancun Late Bean Cowpea, has a vine-like nature with strong branching. The inflorescence begins to grow at the 1st or 2nd node of the vine. The seeds are earthy red and mature slightly late. They are not drought-tolerant but waterlogged. The pods are thick, crisp and tender, not easy to age, and have good quality. The yield per mu is about 1,250 kg.

The plant height is 40-50 cm, the pod length is 30-50 cm, the fresh pod is tender, mature and hard, and flat and round. The seed part does not swell.

Obviously, fresh pods are used as dishes or grains as food, such as Nanchang Yangzizhou black and red pods, Shanghai and Nanjing Panxiang cowpeas, Xiamen dwarf cowpeas, Wuhan Wuyuexian, Anhui Yueyuehong, etc.
