1. Season the minced meat with some spices. I added five-spice powder, pepper powder, ginger juice, and a little black pepper.

2. Cut the eggplant into sections, sprinkle with salt and set aside to marinate.

3. Chop onion and slice garlic

4. Heat a little oil in the rice cooker and add the ingredients in step 3.

5. Stir-fry until fragrant and add minced meat.

6. When the minced meat is cooked, add appropriate amount of soy sauce and continue to stir-fry

7. If the minced meat is too fat, oil will be produced during this process. No more oil is needed. Push the minced meat aside and add an appropriate amount of Pixian Douban to the remaining fat.

8. Stir-fry the Pixian Douban alone until the oil turns red, then mix it with the minced meat and continue to stir-fry.

9. Squeeze out the water from the pickled eggplant and stir-fry in the rice cooker

10. After frying for 1-2 minutes, add a little vinegar and appropriate amount of water. The amount of water should be equal to the eggplant. If you like more soup, you can add a little more. Cover and simmer for 3-5 minutes

11. Open the lid and continue to stir-fry until the soup is as thick as you like.

Tips

1. The amount of salt in the Pixian Douban and pickled eggplant is enough for this dish, so no additional salt is needed. Also, do not add too much salt when pickling. If you accidentally add too much salt, you can rinse it with clean water and squeeze out the water after pickling.

2. The key to this dish is Pixian Douban and minced meat. If you want the eggplant to be fragrant without frying, you can only rely on the aroma of the gravy; Pixian Douban is a magical condiment. In addition to marinating the meat, this dish does not use too many seasonings during the frying process, and Pixian Douban is definitely the secret weapon, unless you can't eat spicy food, it's another matter. If you can eat spicy food, feel free to add it~
