Soft fried tomatoes

raw material】

250g tomatoes, 3 eggs, 750g soybean oil (actual consumption 50g), 2g refined salt, 25g flour, 30g soy sauce, 25g starch, 6g sesame flour (baked), 5g black pepper, 15g green onion, 16g sesame oil

【Production process】

1. Put soy sauce, sesame noodles, black pepper, chopped green onion and sesame oil in a porcelain bowl, stir well to make pickle sauce, set aside. 2. Wash the tomatoes, blanch them in boiling water, peel, remove the stems, split and seed them, cut them into 2 cm thick slices, then coat the tomato slices with the pickle sauce paste one by one, put them into the wok, fry them until they turn slightly yellow, remove them with a colander and control the oil. 3. Beat the egg white into the mixed pickle sauce, add the remaining starch and flour, stir well to make pickle sauce paste. 4. Heat the wok and add soybean oil. When it is 30% to 40% hot over high heat, coat the tomato slices coated with flour with the pickle sauce paste one by one, put them into the wok, fry them until they turn slightly yellow, remove them with a colander and control the oil. 5. When eating, serve it while it is hot and serve with a dish of chili sauce.

Pot-fried tomatoes

【raw material】

500g tomatoes, 2 eggs, 50g flour, 100g soybean oil, 2g salt, 10g sugar, 2g MSG, 5g sesame oil, 10g green onion, 5g ginger, 15g cooking wine, 250ml chicken broth, sesame seeds (baked)

【Production process】

1. Wash the tomatoes, blanch them in boiling water for about 2 minutes, peel them, cut them, remove the stems and seeds, and then cut them into 2 cm thick slices, sprinkle with a little refined salt, and marinate them. 2. Peel the green onions and ginger, wash them, and cut them into small pieces for later use. 3. Beat the eggs in a bowl and beat them until they foam. After cleaning the wok, heat it up, add soybean oil, and when the oil is 40% to 50% hot, dip both sides of the tomatoes in flour, then dip them in egg liquid, and put them into the wok one by one, frying both sides until golden brown. 4. Put chopped green onion, ginger, chicken soup, refined salt, and sugar in the wok, cover the pot, boil the soup over high heat, add the fried tomato slices, simmer over low heat for a while, add cooking wine and MSG, and when the soup is dry, pour in sesame oil, put it in a plate, and sprinkle with roasted sesame seeds.
