Kidney Bean Origin Introduction

White kidney bean is a traditional legume crop in Lijiang. In recent years, with the increase in foreign exchange earnings from white kidney bean exports, the vast mountainous areas of Lijiang have taken white kidney bean products as an important industry for poverty alleviation and prosperity. Lijiang's white kidney bean industry has become one of the bases for kidney bean exports in the province.

The annual output of Lijiang Liming and Ludian alone reaches more than 4,000 tons. Lijiang kidney beans are mainly produced in the high-altitude mountainous areas of Tai'an, Ludian, Judian, Liming and other places in the west of Lijiang. Due to good soil and water and no pollution, Lijiang kidney beans are not only of good quality, but also full in size and bright in color. They are the best raw materials for making bean paste, bean filling, bean crisps, high-end candies, bean powder, soy milk, and are popular for export and foreign exchange earnings.

In recent years, Japanese kidney bean experts, domestic Ministry of Agriculture's green food certification department, World Bank officials, EU BCS certification agency agricultural industry development project and local development assessment expert Werner Augusta and others have visited AA-grade green food kidney bean bases in Lijiang Tai'an, Jizi and other places. They believe that Lijiang's AA-grade kidney bean production process fully complies with the international AA-grade green food standards.

For this reason, Lijiang has been listed as an AA-level green food development base by the China Green Food Development Center of the Ministry of Agriculture. It is reported that among the more than 300 kinds of A-level green foods in my country, there are only four AA-level green foods, namely Shandong peanuts, Heilongjiang soybeans, Hebei small red beans, and Yunnan Lijiang kidney beans. At present, Lijiang County plans to build a 5,000-acre kidney bean base in Da'an Township, Ludian, and Jidian in eight years, with an annual output of 280 tons of AA-level kidney beans, all of which are exported to Japan.

Kidney Bean Nutrition Analysis

Kidney beans are rich in nutrition. According to measurements, every 100 grams of kidney beans contains 23.1 grams of protein, 1.3 grams of fat, 56.9 grams of carbohydrates, 0.24 milligrams of carotene, 160 milligrams of calcium, 410 milligrams of phosphorus, 7.3 milligrams of iron, and abundant B vitamins. Fresh beans also contain abundant vitamin C. Kidney beans are large and full, with a fine texture and rich in sand. They can be eaten in a variety of ways, such as boiled or stewed, made into bean fillings, bean paste, soups, roasted meats, canned or cold drinks, cakes, sweet snacks, etc.
