Ingredients and steps for making scallop porridge

Scallop porridge is a common porridge in southern China. It is delicious and nutritious. Different ingredients can be added during its preparation, allowing people to taste different flavors. So what ingredients are needed for common scallop porridge? What are their specific methods?

Scallop and Taro Porridge

1. When making scallop porridge, you can add an appropriate amount of taro to make scallop and taro porridge. The ingredients needed are 50 grams of white rice, 400 grams of taro, 10 fresh shrimps, a small piece of carrot, appropriate amounts of green onion and shredded pork, 15 scallops, and appropriate amounts of celery, shiitake mushrooms, white pepper powder and table salt.

2. Soak the mushrooms and cut them into small pieces, peel the shrimps and cut the carrots into shreds, chop the green onions and celery into fine pieces, wash the white rice, peel the taro and cut it into pieces, put them into the pot with the white rice and add clean water to cook.

3. Heat oil in a wok, then add shredded pork, mushrooms, shrimps and onions into the wok and stir-fry. After fragrant, put them into the porridge pot together with shredded carrots. Add scallops into the pot and cook together. After cooking, add chopped celery, salt and pepper to season.

Scallop Chicken Congee

1. When making scallop porridge, you can also add an appropriate amount of chicken. The specific ingredients are 100 grams of rice, 25 grams of scallops, 50 grams of chicken, 50 grams of water chestnuts, 50 grams of fresh mushrooms, 1 gram of lard, 10 grams of cooking wine, and appropriate amounts of salt, green onions, ginger and pepper.

2. Wash the dried scallops and tear them into small pieces. Wash the chicken and cut them into strips. Put them together, add cooking wine and mix well. Steam them in a pot. Soak the mushrooms until soft, remove the stems and cut them into small dices. Peel the water chestnuts and cut them into small dices.

3. After washing the rice, put it into the pot, add water and bring to a boil. Then add diced mushrooms, diced water chestnuts, scallops and chicken. Then simmer over low heat. After the porridge is cooked, add salt, lard, chopped green onion and ginger, and finally sprinkle with pepper to enhance the flavor.
