1. When making dried black plums, you should choose fresh and naturally ripe plums. After choosing the name, you need to pick them out and remove those diseased, insect-infested and rotten fruits. The remaining good quality fresh plums should be washed with clean water and the surface moisture should be dried.

2. To make dried black plums by yourself, you also need to prepare a special drying stove. This stove is mostly made of bamboo. The outer layer is sealed with yellow mud during the production process. About 15 cm above the upper edge, a flat drying rack is made of light bamboo, and then fixed with two bamboos from the bottom.

3. After preparing the plums and the oven, you can start baking. When making it, put the fresh plums on the baking rack, prepare an appropriate amount of pine wood, light them and put them into the oven, burn them on high heat for two hours, then on low heat for 12 hours, then stop heating and let it cool down naturally.

4. After the baked plums have cooled down, pick them carefully and store them separately according to their water content. Put those with high water content on the bottom layer and then bake them a second time. Don't finish until all the plums are 80% to 90% dry.

5. Dried black plums are graded after processing. Their grades are mainly based on the season. The dried black plums made after the plum season are fully ripe and are classified as first-class, while those processed before the plum season are not fully ripe and are classified as second-class.

6. After being made, dried plums must be sealed to prevent moisture. The best way to preserve them is to put them in a sealable fresh-keeping bag and seal the mouth. This makes it convenient for storage and transportation. If people cannot finish eating the dried plums in time after purchasing them, they must put them in the bag and seal it again, otherwise the dried plums will easily deteriorate.
