Heat the oil in a wok, add the peppers first, then add the scallion and ginger, then add the cooking wine and soy sauce, stir-fry until fragrant, then add the fermented black beans to make red oil, then add the stone snails in and stir-fry, add salt, sugar and pepper powder to season, and continue to stir-fry for a while.
