1. Braised Chicken with Mushrooms and Chestnuts Step 1: Prepare mushrooms, chicken, and chestnuts. Step 2: Soak mushrooms in warm water. Remove the roots when the surface of the mushrooms is transparent. Wash and drain the impurities. Step 3: Wash the chicken and cut it into pieces. Soak the chicken in cooking wine and cold water. Rinse and drain. Step 4: Wash the chestnuts and soak them in warm water. Slice the ginger. Step 5: Heat the pan and oil, sauté ginger slices, garlic cloves, and star anise in the pan, add the chicken and stir-fry. Step 6: Add cooking wine, soy sauce, sugar, and mushrooms, stir-fry evenly, and add boiling water. Step 7: Adjust the heat to medium and cover the lid and simmer for 20 minutes. Finally, add the chestnuts and cook for another 20 minutes.

2. Braised loofah with abalone sauce and mushrooms Step 1: Prepare mushrooms and loofah. The seasonings include oil, salt, abalone sauce, garlic, and chopped green onions. Step 2: Soak the mushrooms in water for about 30 minutes, peel and cut the loofah into pieces, and mince the garlic. Step 3: Heat the oil in the pan to 60%, add the minced garlic and sauté until fragrant. Step 4: Stir-fry the mushrooms in the pan, then add the loofah, stir-fry evenly, then pour in the abalone sauce and a small amount of salt. Step 5: Stir-fry evenly, sprinkle with chopped green onions when the loofah and mushrooms are soft.
