Steps for cooking lentil fried meat

1. Tear off the old tendons of the lentils, then shine them against a bright light, tear off the part with insects, and tear the lentils in half. Rinse them twice, soak them in concentrated salt water for about 10 minutes, and rinse them twice more before draining them and preparing to cook. Heat a clean, oil-free pan, pour in the lentils and stir-fry until the lentils change color and some small yellow bubbles appear on the surface, then you can serve them and add the meat to stir-fry.

2. Cut the pork into thin slices and mix well with a little light soy sauce;

3. Heat oil in a pan, add chopped chili and fry until fragrant, then add lentils and stir-fry together, add salt to taste;

4. Add the meat slices and stir-fry quickly over high heat. When the meat slices change color, pour in soy sauce and oyster sauce and mix well. Spray a spoonful of water and boil for a while. When the sauce is reduced, remove from the pan and serve.

Tips

1. Lentils contain protein, carbohydrates, toxic proteins, lectins, and saponins that can cause hemolysis. Therefore, you must be careful when heating them. Lentils must be cooked before eating, otherwise food poisoning may occur.

2. Concentrated salt water can rinse out pesticide residues, and stir-frying lentils in a dry pan can decompose the saponins in the lentils. Lentils treated in this way can be eaten safely.

3. Lentils soaked in concentrated salt water will not be salty. You can adjust the salt according to your taste. You can also replace the chopped pepper with fresh pepper, which has a nice fragrance.
