3. When the oil pan is 80% hot, add the chopped onion, ginger and garlic, and stir-fry over high heat until fragrant. Then add the chopped mushrooms and carrots into the pan and continue to stir-fry evenly over high heat. When it is almost cooked, add a little bit of balsamic vinegar and refined salt, and continue to stir-fry for two minutes.
