Haha, I thought of using bean paste, which not only makes the fried dough sticks tasty, but also keeps them crispy. Besides, the addition of bean paste adds a lot of color to this dish.

Eggplants love to absorb oil when fried. Is there any way to deal with it? Here's a little trick: Use salt to marinate the moisture out of the eggplants in advance, and then put them in an oil-free pan and fry them until half-cooked. This way, you can use only normal amount of oil when frying them and they will still taste very good.

How to make fried dough sticks with eggplant

1. Cut the eggplant into cubes and put them in a bowl. Add appropriate amount of salt and marinate.

2. Prepare other materials

3. Put the marinated eggplant in the pan and fry it on low heat

4. Fry the eggplant until it changes color and becomes slightly soft. Place it on a plate.

5. Heat the pan, add a proper amount of oil, and fry the cut dough sticks.

6. Put the fried dough sticks into a bowl and set aside

7. Use the remaining oil to fry the garlic until fragrant

8. Add eggplant and stir-fry

9. Add green pepper and stir fry together

10. Stir fry for a few times and add bean paste and stir fry together

11. Add the fried dough sticks and continue to stir-fry, so that the bean paste is evenly coated on each ingredient

12. Layer on a plate

Tips

1. Marinate the eggplant with salt to remove some moisture, then put it into an oil-free pan and stir-fry until the eggplant changes color and becomes soft and half cooked, so that the eggplant will not absorb oil when frying in the next step;

2. Fry the fried dough sticks in oil in advance to make them crispier.

3. Use the remaining oil in the pan to stir-fry the garlic cloves, then add the eggplant and green peppers, and then stir-fry the bean paste, because they are harder to absorb than the fried dough sticks;

4. Add the fried dough sticks and stir-fry until evenly cooked.

5. Remember not to add salt, because the eggplant has been marinated with oil in advance, and the bean paste also contains salt.
