Ingredients and methods of winter melon and shrimp

Winter melon and shrimp soup is very delicious and refreshing. I want to drink it a second time after drinking it once. So here is how to make winter melon and shrimp soup:

Winter melon and shrimp ingredients:

350g winter melon, 8 fresh shrimps, 10g chopped green onion, 2 slices of garlic, 2 slices of ginger, 150g broth, 50ml steamed fish soy sauce, 5g salt, 5ml rice wine, 20ml oil, 8ml fresh soy sauce;

Winter melon and shrimp recipe:

1. Clean the shrimps, peel them and keep the shell at the tail. Cut the winter melon into 3 cm cubes and set aside.

2. Boil hot water in a pot, add onion and ginger slices, then add fresh shrimp, salt and rice wine, blanch until cooked, remove and set aside.

3. Heat the oil in a pan until it is 50% cooked, add the winter melon cubes, and fry over low heat until golden brown. Then add the broth and simmer over low heat for 10 minutes.

4. Then pour in steamed fish soy sauce and fresh soy sauce, simmer over high heat until the sauce is reduced, then remove from the heat and serve on a plate. Place the blanched shrimps on the winter melon and sprinkle with chopped green onions.

Tips:

After being fried, the winter melon feels more glutinous and smoother, and the flavor is deeper.

The shrimp skins and shrimp heads left over from cooking shrimp can be used to make soup, so don't waste them.
