How to eat Jerusalem artichokes? The Jerusalem artichoke pickles that I tasted by chance have always been a delicacy in my heart. This year, after Jerusalem artichokes were on the market, I specially bought some. I went back and asked my mother how to pickle them. I would like to share them with you.

Ingredients: Jerusalem artichoke, salt, aniseed, pepper, cloves, cinnamon, water

Jerusalem artichoke pickling method

1. Wash the Jerusalem artichokes and dry them. Add all the seasonings to water and bring to a boil, then let them cool.

2. Put the dried Jerusalem artichokes in a fresh-keeping box. Pour the cooled seasoning water into the fresh-keeping box.

3. Add a layer of plastic wrap first, then cover the lid and place in a cool place to marinate for more than a week.

4. When eating, cut the Jerusalem artichokes into thin strips, add some cooked sesame seeds, and then drizzle some soy sauce, vinegar and sesame oil. It goes well with rice.

Jerusalem artichokes have a two-way regulating effect on blood sugar, that is, on the one hand, they can lower the blood sugar of diabetic patients, and on the other hand, they can raise the blood sugar of hypoglycemic patients. Studies have shown that Jerusalem artichokes contain a substance that is very similar in structure to endogenous insulin in the human pancreas. When sugar appears in the urine, eating Jerusalem artichokes can control the sugar in the urine, indicating that it has the effect of lowering blood sugar. When people have hypoglycemia, eating Jerusalem artichokes can also relieve it.

Tips for making pickled Jerusalem artichokes

If you add some crushed peanuts, chopped green onions, dried shrimps, pickled peppers, etc., the taste will be even better. However, in order to cater to the taste of my Doudou, I didn't dare to add those.
