1. Homemade clear soup hotpot base: three-bone base

Step 1: Prepare 300 grams each of pork bones, beef bones and chicken feet, 10 grams of ginger, wolfberry, jujube, pepper and salt, green onions and MSG.

Step 2: Clean the three kinds of bones, chop the beef bones and pork bones first, smash the ginger into pieces, and tie the green onions into knots for later use.

Step 3: Blanch all three kinds of bones in boiling water, then add green onions and cooking wine to remove the fishy smell.

Step 4: After changing to a new pot of water, put the three kinds of bones in and start cooking the soup base. When it boils over high heat, switch to low heat.

Step 5: Slow cook until the soup turns milky white, then filter out the meat residue and foam on top and take the clear soup.

Step 6: Add chicken essence, MSG, red dates, peppercorns and wolfberries to the clear soup, and add salt to taste.

Step 1: Prepare appropriate amounts of mutton offal, mutton, mutton bones, onions, ginger, almonds, cinnamon, angelica, longan meat, garlic sprouts, and cardamom.

Step 2: Bring a pot of water to a boil, add mutton offal, mutton and mutton bones, and skim off the foam while cooking.

Step 3: Put angelica, longan meat and other spices and herbs into the pot and boil together, then add green onions and ginger.

Step 4: Boil all the ingredients together for more than an hour, then add the garlic sprouts at the end.
