1. Wash the chicken legs, remove the meat and cut it into small dices, then add salt, pepper and appropriate amount of soy sauce to marinate. Dice the green pepper and onion. Cut the dried chili into small pieces, and wash and chop all the green onions, ginger and garlic.

2. Add more cooking oil to the pot, heat it up, then fry the chicken. When the chicken turns yellow, take it out, drain the excess oil, then put the chopped onion into the oil and fry it for a while, then take it out for later use.

3. Pour out the excess oil in the pot, leaving only the bottom oil. After heating, add the scallion, ginger and garlic and stir-fry until fragrant.
