How to stir-fry lettuce

1. Ingredients for stir-fried lettuce

One pound of lettuce, garlic, pepper, salt, chicken essence and oil as auxiliary ingredients.

2. How to stir-fry lettuce

Step 1: Wash the lettuce, peel and remove the leaves. Peel the garlic and crush it with the back of a knife into garlic paste.

Step 2: Start cutting the lettuce diagonally into thin skins, and keep rolling the lettuce diagonally downward to ensure that the lettuce slices are uniform in size.

Step 3: Boil a pot of water, put in the lettuce slices and blanch them slowly for half a minute. This will remove the raw vegetable taste of the lettuce itself, and the lettuce will become greener after blanching.

Step 4: Quickly take out the lettuce slices and put them into cold water to ensure that the lettuce maintains its crisp texture. Overheating will cause the lettuce to turn yellow and lose its green color.

Step 5: Heat the oil in a pan for 70% heat, add vegetable oil and Sichuan peppercorns and slowly sauté until the peppercorns turn black, then remove the peppercorns.

Step 6: Move the pot away from the high heat, reduce the oil temperature by half, then add the minced garlic and stir-fry again. The purpose of cooling down is to prevent the minced garlic from becoming mushy under high temperature.

Step 7: After adding the minced garlic, wait until the garlic aroma comes out and then immediately add the lettuce slices and stir-fry quickly. You must move quickly here, otherwise the minced garlic and lettuce will change color. Add seasonings and stir well before serving.
