Ingredients for pickled garlic eggplant : 500g eggplant, 5 cloves of garlic, appropriate amount of green onion, a little salt, red pepper, chicken essence, salad oil, sesame seeds, and appropriate amount of sesame oil.

How to make pickled garlic eggplant :

1. Peel the garlic and add a small amount of cooking wine to mash it into puree. Then fry the sesame seeds, chop the red pepper into fine pieces, and chop the green onions into chopped green onions for later use.

2. Wash the eggplants, cut them in half without cutting in the middle, put them in clean water, add a small amount of salt and soak for five minutes.
